State regulations for shellfish harvesting boats now mandate that oysters be kept cool shortly after they're harvested, with the regulations enacted first in Norwalk, Westport and Darien. Shellfish boats elsewhere have a little longer before the regulation applies to them as well, although some boats elsewhere have already made the safety changes.
